S’mores are a pretty simple concept- roasted marshmallow, bar of chocolate, two graham crackers. One night I decided to change it up a bit. I had just made a batch of chocolate chip cookies when my family decided it was time to roast marshmallows. I started to pull out the box of graham crackers, but then had the idea of sticking a marshmallow between two warm cookies. It worked so well, I wrote this!
The thing is, a s’more made with graham crackers has one of the most unique and beautiful flavor profiles out there (in my humble opinion). But both the graham cracker and the chocolate are usually cold or room temperature, which takes away from the warm gooeyness of the marshmallow. I always want the chocolate to be hot, so I try sticking it inside the marshmallow, but it doesn’t really work out. In the case of a chocolate chips cookie s’more, the cookie surrounding the marshmallow is already warm (or can be heated up easily), and contains melty chocolate chips in place of a cold chocolate bar. Plus, the taste stays amazing. A chocolate chip cookie is the perfect solution!

Chocolate Chip Cookie S’mores
Ingredients
- 1 jumbo marshmallow, roasted to preferred level
- 2 chocolate chip cookies, warm or fresh-out-of-the-oven warm
- Sandwich the marshmallow between the chocolate chip cookies.
- Eat.
- Share your wisdom with friends.
Conclusions:
You know what would be cool? Specially-made cookies just for s’mores. Like cookies with graham cracker crumbs or crushed graham crackers mixed in, or with different candies and other mix-ins. The ones I used had chocolate chunks, dark chocolate chips, and butterscotch chips. The butterscotch chips were especially good, because I think they brought in a flavor reminiscent of graham crackers. Mini marshmallows would be pretty cool baked inside the cookies, too. Or maybe a chocolate or peanut butter cookie? What do you think?
