Stout and Cream(er) Cheese Brownies

So it’s a tad late for St. Patrick’s Day…but this brownie recipe will not go to waste.

I went to the parade in the New York City Saturday, and besides it being an insanely fun and crazy time, I also had an amazing waffle from the waffle truck, Wafels and Dinges 🙂 If you haven’t been, go.

After the parade, I went straight home and started baking. I’m such a nerd.

Stout and Cream(er) Cheese Brownies Teenage Cakeland

For those of you who have seen my post on the lovely Bailey’s Irish Creamer Cheesecake Pie, you may remember that it leaves a surplus of cheesecake batter. And although it would’ve been perfectly acceptable to eat the leftover batter raw, straight from the bowl, I opted to put it on top of some brownies. Some beer brownies.

Being only sixteen, I’d never baked with alcohol before, so this was a first. I used Chocolate Bock in place of the Stout the original recipe called for, because that was what I (my parents) had on hand and because I thought the concept of chocolate beer in a chocolate recipe would be interesting.


To save time, I used a boxed brownie mixed and made a few adjustments, then added the leftover cream cheese on top and marbled it in.

Really, any brownie recipe and any cheesecake batter can be used. I think the classic combo of the beer and Irish cream tastes worked really well here. The chocolate beer was more detectable the next day, but it wasn’t overpowering. The Irish cream I of course just looove and think it would be great anywhere.


Stout and Cream(er) Cheese Brownies adapted from The Local Honey


  1. Preheat oven according to directions on box and line and grease an 8×8 pan.
  2. Combine brownie mix, eggs, water, and oil and mix until combined (or according to directions on the package).
  3. Pour into the pan. Top with cheesecake batter, then swirl the two with a knife to create a marbled design.
  4. Bake according to directions on the package.
  5. Cool completely before slicing.

Conclusions: Separately, the Stout brownie and Irish creamer cheesecake are each beautiful in their own ways. Together, the two combine to create a classy, elegant, and Saint Patricksy dessert that is melt in your mouth moist
