Cake Pop Cream Pie

As usual, this week has been really hectic for me. I have a low tolerance for stress, and it…it stresses me out. But baking usually helps. It always helps. Because when I’m baking, that’s all there is to focus on, and I don’t need to think about school, or my future, or my family. There’s only beauty and creativity.

I made a Cake Pop Cream Pie last night.

Why have I not thought of this before?

It was highly experimental, and highly awesome.

It all started with a half recipe of cake. Green velvet cake, to be exact. Because I didn’t have red food dye.

And I used Girl Scout cookies as the crust!

Crush fifteen cookies and mix them with two tablespoons applesauce or melted butter. Spread the crust on the bottom of an 8-inch pie pan.

Take the cake and crumble it into crumbs. Mix the crumbs with about 1/2 cup frosting, or mix in enough frosting so the consistency is sticky and malleable but still a bit crumbly. Form spheres and fit them into the pie pan on top of the crust. You may have some leftover cake-either crumble it over the cake balls, make cake pops, or just eat it.

Melt about 1/3 a package of white chocolate candy melts in the microwave. Follow the instructions on the bag carefully so the chocolate does not burn!!! This requires intermittent mixing.

Pour the melted chocolate all over the cake, spreading it thin so it is not clumped in one area.

Bake this for about 10 minutes in a preheated oven.

While it is in the oven, make pudding! I used 1/2 cup vanilla pudding and 1 cup skim milk. After the pie has cooled, pour the it all over the top of the pie.

Make whipped cream by whipping 2 tbs sugar with 1 cup heavy cream in a frozen bowl, until it looks rather whipped cream-like.

Spread this on top of the pie and top with green sprinkles!

Because it’s St. Patrick’s Day. We’re quite festive over here.

Cake Pop Cream Pie

Ingredients

  • 15 Do-si-dos or other cookies (such as graham crackers or Oreos), crushed
  • 2 tbs butter or applesauce
  • 1/2 baked vanilla cake
  • 1/2 cup frosting
  • 1/3 bag Wilton white chocolate candy melts
  • 1 (1/2 cup) box vanilla pudding
  • 1 cup milk (I used skim)
  • 1 cup heavy cream
  • 2 tbs sugar
  • Green sugar crystals
  1. Preheat oven to 350 degrees and grease an 8-inch pie plate.
  2. Combine crushed cookies with butter or applesauce and press into the bottom of the pie plate.
  3. Crumble cake into crumbs and mix in frosting until the cake is sticky and malleable enough to form balls, but still crumbly. Form balls and fit on top of the crust. You may have some cake leftover.
  4. Melt chocolate according to package instructions. Pour all over cake balls, thinly, so there are no clumps.
  5. Bake for ten minutes and let cool completely. Meanwhile, put a mixing bowl into the freezer.
  6. Make pudding- mix pudding with milk, then pour on top of cooled pie.
  7. Make whipped cream- place the sugar into the frozen mixing bowl and add heavy cream. Whip until stiff peaks form. Pour on top of pudding.
  8. Cover in green sugar crystals.
  9. Refrigerate until ready to serve.

Conclusions: This pie was really good. The chocolate was a bit hard to cut through, but the flavor is like no other. The pudding and whipped cream added beautifully to make a silky texture on top of the classic cake pop taste. It truly is something you need to make, even if you might end up hiding away with it in a corner and eating it with a spoon in about seven minutes.
